Ingredients

    1 1/2 Cup Fresh Spinach - steamed
    2 whole mushrooms, sliced and sauteed in a wee bit of olive oil.

    Mix spinach, mushrooms and the following ingredients...

    1 fresh egg to bnd
    2 tbs Ricotta Cheese
    1 Tbs Cream Cheese
    1 Tbs. Rice Flour
    1/2 Tbs. Parmesan Cheese
    1/2 Tbs. Mozzarella Cheese

    Form a patty. Saute in olive oil
    Season to taste

Makes 1 large spinach-mushroom cake.
