Ingredients

    4 La Tortilla Factory Lo Carb Tortillas
    16 Large cooked shrimp (tails removed)
    1 Cup Romaine Lettuce
    1/2 cup Cabot Vermont 50% Light Cheddar Cheese
    1/2 cup onions sauteed (use Pam non fat cooking spray)
    4 Tsp Siracha Chili Sauce (or Hot Sauce)
    4 Tbsp Newman's Own Mango Salsa


Directions

If you're usnig frozen shrimp, you will need to thaw and remove tails. Once complete, skewer and marinate shrimp in siracha sauce for about 5 minutes--while you chop your onion. Throw on the grill- for a couple of minutes to warm (they are already cooked after all).
Sautee onions with Pam non cook cooking spray until soft.

Time for assembly.

Lay out all 4 tortillas. Top each with 1/2 tbsp of sour cream, add 1/4 cup lettuce, 1/8 cup cheese, 4 grilled shrimp and 1/2 cup onion. Top with salsa.

Makes 2 fajitas per person.
