Ingredients

    1 bag of fresh spinach
    i whole onion, chopped, red preffered(for color mixture)
    one whole can sardines in tomato sauce or hot sauce if you like a little heat
    2 tablespoons of any low fat mayo
    2 yellow squash cut in small chunks
    1 red or yellow bell pepper sliced


Directions

prep: cut squash, onion, bell pepper into small slices or chunks. in seperate bowl... mash sardines and the sauce in bowl until its smushy... fry or steam onions, squash, and peppers for about 3-5 mins on med- low heat until desired texture is reached... then mix the sardines, mayo, and veggies(not the spinach) in a bowl... place 1 cup of spinach on each plate... then top with mixture and enjoy!

ps... you can sub for tuna... but sardines makes more and it has a very similar taste as that of salmon.. with the same consistancy and edible bones too!
