Introduction

A yummy fritatta with fresh veggies. You can leave out the bacon for a meat-free dish, but I like the smokey taste it adds to the eggs. This can be made in a regular non-stick skillet, but I prefer to use my cast iron skillet.

Ingredients

    1 TBSP olive oil
    1 medium onion, chopped
    3/4 c. broccoli, chopped (I like to use fresh)
    2 TBSP Oscar Mayer bacon pieces (you can use any brand, or even fry your own bacon if you like)
    5 eggs
    2 TBSP almond milk
    2 Veggie Slices, cheddar flavor (diary free cheese)
    1/2 tsp cayenne pepper
    Salt and pepper to taste

Directions

Preheat the oven to 400 degrees. Heat oil in pan. Add onions and saute for 2 minutes. Add broccoli and bacon pieces (if using) to pan. Salt and pepper to taste. Continue to cook, stirring frequently, until onion and broccoli are soft.

In the meantime, add the eggs, almond milk, cayenne pepper, and a bit more salt and pepper to a bowl. Beat until combined.

When the onion mixture is ready, add the egg mixture to the pan. Cook for 2-3 minutes, not stirring. Place in oven and cook for 25 minutes. Add the cheese to the top, tearing the slices into small pieces. Broil for 2-3 minutes or until cheese melts.

This is great served with a nice salad and crusty bread.
