Introduction

I adapted a Fannie Farmer recipe to be a little healthier and less fattening. My family loves these! Even my picky son said he likes these better than Bisquick pancakes!

You could use all white or wheat flour if you prefer. And all Splenda if you're watching your sugar.

Ingredients

    Flour, white, self-rising - 1.75 cup
    Kretschmer Toasted Wheat Bran, 1/4 cup
    Splenda, 2 Tbsp
    Baking Powder, 4 tsp
    Salt, 1 tsp

    Milk, nonfat, 1 cup
    Applesauce, unsweetened, .5 cup
    Banana, fresh, 1 large (8" to 8-7/8" long)
    Smart Balance Light Buttery Spread with Flax Oil, 4 tbsp
    Egg substitute, liquid (Egg Beaters), .5 cup
    Pure Vanilla, 1 tsp

Directions

Sift dry ingredients in one bowl.
Mix wet ingredients in another.
Mix wet & dry ingredients together.
Add additional water if consistency is too thick.
1/4 cup of batter makes one pancake.
Serving size in one pancake.
Batter makes 16 pancakes.
