Introduction

Number of Servings: 4

Ingredients

    1 Whole Chicken Breast, sliced into strips
    3 c. cooked Uncle Ben's Whole Grain Instant Brown Rice
    1 Large can Cream of Chicken Soup(reduced fat)
    1c. Skim milk
    1 c. fresh broccoli florets (can use frozen)
    4 oz. shredded low-fat cheddar cheese

Directions

Cook rice in microwave. Add chicken soup, milk & broccoli. Mix well (can add some water if necessary). Spray a 9x9 pan - I use glass - with Pam. Pour in rice mixture. Place sliced chicken strips over entire casserole. Cover and bake for 45 minutes. Remove cover, spread shredded cheddar over chicken and continue baking uncovered for remaining 15 minutes.
