Directions

heat saute pan and add olive oil
add onions and cook until transparent
add green peppers and mushrooms and cook 2 minutes
add 1/12 cups broth and bring to boil
reduce heat to medium' stirring constantly, and add broth one cup at a time each time letting rice soak up rice. add 3-6 more cups of broth until rice is al dente
add parsley
