Introduction

Ingredients

    1 1/2 c All Purpose Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Salt
    1 tsp Cloves, ground
    1 tsp Cinnamon, ground
    2/3 cup Canola Oil
    1/2 cup Granulated Sugar
    1/2 cup Brown Sugar
    1 1/2 cup grated Carrots
    2 eggs
    1 tsp Vanilla

Directions

1) Preheat oven to 350 - spray muffin tin with cooking spray
2) Stir together flour, baking powder, baking soda, salt, cloves and cinnamon. Mix well.
3) Add the oil, sugars, grated carrots, vanilla and eggs. Beat for at least 2 minutes at medium speed.
4) Pour or scoop batter into prepared muffin tins, smoothing the top optional.
5) Bake at 350 for approximately 45 minutes or until tests done with a toothpick

Makes 6 Large Muffins

    great recipe but change a few things. Used applesauce instead of Canola Oil and made them smaller - 12 muffins. - 3/21/10
