Introduction

This is a yummy refreshing side dish packed with protein and fiber but low in fat!!! This is a yummy refreshing side dish packed with protein and fiber but low in fat!!!
Number of Servings: 4

Ingredients

    White Wine Vinegar, 6 tsp (1/8th cup)
    Cilantro, raw, 2 tbsp (1/8th cup) - chopped
    Yellow Sweet Corn, Frozen, 1 cup kernels - thawed
    Roma Tomatoes, 4 small - chopped
    Green Onions, raw, .5 cup, thinly sliced
    Jalapeno pepper raw (1 pepper)., - finely chopped

    Beans, black, 16 oz can

Directions

Combine all ingredients except black beans. Cover and refrigerate until ready to serve (30 minutes to overnight).

Warm beans over the stove until heated through.

Serve salsa on top of 1/2 cup of black beans.

    Easy to make and tasty. It took 5 minutes. We served it over our fish along with grilled asparagus and fresh strawberries....YUM! - 7/8/11
