Number of Servings: 4

Ingredients

    1 Chicken Breast, Boiled and chopped
    1 Medium White Onion, Chopped
    1 Medium Cucumber with peel
    1/4 c unsalted peanuts
    1 tbsp Sesame seeds
    1tbsp Sesame oil (I prefer toasted, but any will work)
    1 tbsp rice vinegar
    1/4 c fresh lime juice
    Salt and pepper to taste
    Optional--Red pepper flakes

Directions

1. Remove the seeds from the cucumber and chhop or dice to a size that you prefer. I cut thin 0.5 in strips.
2. Mix finely chopped onion, cucumber, and chicken together in a medium sized bowl.
3. Using a mortor and pestle grind peanuts with seasame seeds.
4. Whisk together vinegar, oil, and lime juice. Add salt, pepper, peanuts and sesame seeds.
5. Mix dressing with salad and toss to coat. Top with red pepper flakes if desired.

This is a nice light salad on its own or serve with Buckwheat soba noodles and soba sauce for a complete meal.
