Ingredients

    1 cup whole wheat flour (freshly ground, if possible)
    1 tsp baking powder
    1 tsp baking soda
    1 cup oats
    1/2 cup raisins (optional - calorie count includes them)
    1 egg, lightly beaten
    1/4 cup olive oil or canola oil
    1/2 cup brown sugar
    1 cup mashed very ripe bananas
    1 tsp vanilla


Directions

Makes 12 regular-size muffins.
Preheat oven to 400 degrees F.
Grease muffin tin.

1.In a bowl, combine flour, baking powder, baking soda, oats, and brown sugar.
2. In another bowl, combine egg, oil, bananas, raisins and vanilla. Add to flour mixture; stir just until blended.
3. Spoon batter into prepared muffin tin. Bake for 20 - 25 minutes.
