Introduction

One night my husband wanted something sweet for a snack. These cookies fit the bill as all I had on hand was almond butter and coconut. One night my husband wanted something sweet for a snack. These cookies fit the bill as all I had on hand was almond butter and coconut.
Number of Servings: 18

Ingredients

    Almond Butter, 1 cup
    Brown sugar, 3/4 cup - lightly packed
    Salt, 1/4 tsp
    Egg, 1 large
    Vanilla extract, 1/2 tsp
    Baking powder, 1/2 tsp
    coconut to sprinkle on top (optional)

    Parchment paper to line cookie sheet with




Directions

Makes 18-24 cookies

Preheat oven to 350 degrees.

Combine all ingredients and mix well.

Drop spoonfuls onto cookie sheet lined with parchment paper.

Flatten out cookies with your fingers. Sprinkle with optional ingredient(s) if desired.

Please note - Make sure your almond butter is very well stirred. If your almond butter is oily it will cause cookies to burn.

    Hi im jess im 16 love cook ing and baking but love cookies even more gotta say thos cookies...well...were....(AWSOME) i loved them and i am home schooled so i was able to put it down for a home ec lol
