Introduction
Just something I came up with from what was in the house and the ground chicken that was on sale at the store. I put it warm over lettuce the first night and rice the next. Its nothing special just simple and easy. It also makes a lot so if your like me and like to have easy meals to freeze for those nights that cooking sounds like way to much work this is great. Ingredients

1 Lg Shallot
4 Cloves Garlic
3 Lg fresh Brussels Sprouts
1 Can Sweet Corn (Fresh is better if in season)
1.5-2lbs Ground Chicken
2tbsp Vegetable oil
Salt and Pepper to taste.
Directions
Slice Shallots and Garlic, and get them started in a 12in saute pan over medium heat.
While that is getting going give your sprouts a quick run through with you knife. I sliced them the same way I did the shallots and garlic, but feel free to cut them in half and then quarters if you want a bigger bite.
Once shallots are starting to really look translucent add in you chicken. This is the point in which you can season the meat anyway you please I just used a little salt and pepper the first time, but spice it up if you like. I added a little hot sauce the second time through, and lemon the 3rd.
Once the chicken is nearly cooked through add the sprouts and corn. When the chicken is done feel free to spoon over any kind of leafy greens, rice, or fill a tortilla.

This was good and a quick easy thing to do overall. I used italian seasoning mix, salt, pepper and 9 of the brussel spouts in chunks. After looking at it, I added about 1 cup of frozen green beans. I had it on lettuce but I think rice next time with a bit of salsa would tip it from good to great. - 9/25/10
