Ingredients

● 6 oz. soybeans in pods
● 2 fresh shitake mushrooms
● 2 stalks napa cabbage
● 1/2 lb. ground turkey
● 1/4 small onion, finely chopped
● 1 tbsp hoisin sauce
● 1/2 tbsp lite soy sauce
● 1/8 tsp 5 spice powder
● 4 oz. canned water chestnuts, drained
● 6 leaves bib lettuce
Directions
1. Prepare soybeans according to package.
2. Remove and discard stems from shitakes. chop the caps. chop cabbage keeping leaves and stems separate.
3. Lightly coat a wok or skillet with cooking spray and place over med/hi heat. add turkey and stir-fry until no longer pink, about 3-4 min. remove turkey from pan and set aside.
4. Lightly re-coat the pan, add cabbage stems and onions, stir-fry until tender, about 2 min.
5. Stir in hoisin, soy and 5-spice powder. add cabbage leaves, shitakes, and water chestnuts; stir-fry for about 1 minute. add turkey back to pan and stir-fry until well combines and heated through, about 2 min.
6. Place 3 lettuce leaves and about 1/4 the soy beans on each plate. divide stir-fry mixture into 4 portions, then divide each portion into 3rds and spoon into lettuce leaves.
