    1 1/2 cups wheat bran
    1 cup nonfat or 1% milk (I used 1%)
    1/2 - 2/3 cup mashed banana (I used 2 bananas)
    1 egg
    2/3 cup brown sugar
    1/2 teaspoon vanilla extract
    1/2 cup all-purpose flour
    1/2 cup whole wheat flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    2 cup blueberries

Mix bran and milk, let sit 10 min. Mix egg, brown sugar and banana and mix in bran mixture.
Stir together dry ingredients (save 2t. of flour and mix into blueberries). Gently fold flour mixture into bran mixture and then mix in blueberries.

love this, even my foodie hubby said this was one of the best things I've ever baked, second only to a chocolate chocolate chip cherry Christmas cookie! - 2/13/14

This recipe was fantastic!! Very moist and tasty. My husband is not a big bran muffin fan, but he loved these. The only thing was that I had to bake it for 25 minutes, however I think that is likely due to my oven temperature being a little off. I will definitely make these again. - 10/1/11
