Introduction

This is a quick fix for dinner: hearty & truly tasty. I suggest 2 servings (1 cup) atop whole wheat pasta (approx. 28g/1 oz = 0.5 c. cooked pasta).

Ingredients

    1 Green Bell Pepper, Chopped (approx 1.5 cup)
    1 Yellow Onion, Diced
    15 White Button Muchrooms (approx 255 grams)
    1 Pkg Yves Veggie Ground Round Original (340 grams)
    1 Can Hunts Thick & Rich Roasted Garlic & Herbs Pasta Sauce (680 ml / 2.869 cups)

Directions

Dice an onion. In a heated large skillet, add diced onions and let sizzle for 2 minutes on medium heat while they cook, chop mushrooms. Once they start to soften, add mushrooms.

The juice released from the onions & mushrooms carmelizes and sweetens the sauce and eliminates the need for any oils or fats.

Let the mushrooms steam up for a few minutes while you chop the green pepper. Stir the onion/mushroom mix.

Then, place the chopped pepper on top of the onion mix so that the peppers aren't touching the pan - this keeps them crispy & nutritious by just steaming them.

Crumble the package of Yves Veggie Ground Round into the mixture. Immediately, add the can of Hunts Thick & Rich Roasted Garlic & Herbs Pasta Sauce. Heat & Serve.

Makes ten 1/2 cup servings at only 112 calories each!
