Introduction

I made this tomato soup with soft tofu instead of cream and it turned out great! I made this tomato soup with soft tofu instead of cream and it turned out great!

Ingredients

    0.5 block of soft tofu
    2 lbs tomatoes
    1 red bell pepper
    1 onion
    1 cup vegetable broth
    about 4 tbsp olive oil
    4 garlic cloves (or more, I used a lot)
    basil

Directions

place the tomatoes, onion, garlic, and bell pepper in a roasting pan. Drizzle with olive oil and roast for 30 - 40 minutes at 350 degrees.

pour all ingredients into a soup pot and add veggie stock and tofu. Blend with an emulsion blended until smooth. Simmer for 10 minutes. Stir in basil and serve.

Makes 5, 1.5-cup servings
