Introduction
This is easy, hot, and fast! This quick dish contains lightly sauted mushrooms, onion, and garlic wrapped in one whole wheat soft taco torilla, which has been spread with one 2 tablespoon serving size of whipped cream cheese spread w/ chives!!! I left out the salt, but it is POPPIN' (that means good!) when you add some salt, not too much, but it really livens it up. But some need to watch out for it so I omitted it. You can try adding your favorite spin on it, like red pepper flakes (my personal favorite but I kept it simple for you), or try the many pre-packed seasonings (mrs. dash, old bay garlic and herb, ect.) they REALLY make it good! Enjoy! This is your template! lacto-ovo vegetarian safe (or for those who are really trying to eat beef once a month- and poultry once a week like spark said!!! Ouch!) This is easy, hot, and fast! Ingredients
-
1. Mushrooms, sliced: 3 CUPS or (225 grams approx)
* most pre-sliced packs are right around 225 grams
2. Whipped cream cheese spread with chives 2 TBSP
* you can use plain also, but chive is better here. It is only 60 calories per 2 tablespoon serving!
3. Onion, 1 slice
4. Minced Galric, 1 Tsp
5. WHOLE WHEAT soft taco soft tortilla, 1 tortilla
* Please dont use white flour, it defeats the purpose... Healthy!!!!
6. Personal seasoning favorites, whatever is good on meat will be good here!!!
* Not in calorie calculations, but adds negligable calories, your choice...
7. Salt
* Not in calorie calculations because some like it low sodium, but believe me the salt makes a difference. Its goes from all right to really really good!
Directions
This makes 1 serving, full of mushrooms, hot and creamy!
*Grab 1 soft taco sized whole wheat tortilla.
* Spread 2 table spoons of whipped cream cheese spread with chives on tortilla.
*set aside
*Add washed diced/sliced mushrooms with about 3 Tablespoons of water into a non stick frying pan.
*Then add 1 slice of onion chopped (or hacked to save time!), and your tsp of minced garlic (comes pre-minced for time saving, or use powder)
*Season as if it were chicken or beef if you like. I recommend adding salt, but wait unitl after to do it to taste.
*Cook 3 cups of mushrooms on high heat JUST UNTIL TENDER. Use a non stick frying pan to make it easier. You do not want them to be over or under cooked. They get to the tender stage quite fast, so be prepared. This will happen very quickly. There should NOT be a lot of excess water! The mushrooms will release their own water in the finished dish, and in the pan!
You can heat the tortilla on the stove (if you are old school you know how to do it directly no the burner hah hah), or in the microwave if you change up the cream cheese-ing process a little. Heat it first to get it softer, then spread, but it is not neccesary, the tortilla gets moist from the mushrooms.
When mushrooms are tender place them on the whip cream cheesed tortilla. It works best to hold it like a soft taco, and then you can eat it! The mushrooms will over flow it, but it just make syou feel like you are eating more, hah hah.
*Enjoy!
(Sonoma tortilla factory makes low carb ones that taste great and are only 60 calories (dont know how much they cost) and that will reduce this calorie count significantly. I used average whole wheat tortillas in the calculation.)
Anykind of mushrooms will work. Portabellas are good. Those plain white humble mushrooms are good... If you wanna live it up try oyster mushrooms. Dice them, it doesnt need to be perfect. The photo is of pre-sliced ones. But the quicker you hack them the faster you will eat! Dont worry!
You can buy pre-sliced mushroom, a package usually yields about 225 grams or 3 cups. You can just open the package, rinse them, and dump them in the pan!
NOTE ON FAT: I need to get my fat in someplace, I often have a hard time, and have to add it... So I am willing to make room for it here!!! Hope you can budget it in yourself! Its great!
