Ingredients

    CAKE

    5 eggs
    5 oz cream cheese
    1/8 tsp cream of tartar
    1 tps vanilla extract
    10 packets of stevia

    Preheat oven to 300. Grease three 9" cake pans.

    Seperate eggs. Beat egg whites and cream of tartar until stiff peaks form.

    In a seperate bowl, combine egg yolks, vanilla, stevia and cream cheese, gently fold into egg whites. Don't over mix or egg whites will break down.

    Pour mixture evenly into greased pans, and bake for 20-30 minutes, or until inserted knife comes out clean. Remove cakes from pan when cool.

    CHOCOLATE FILLING

    1 1/2 cups heavy whipping cream
    *3 tbsp baking cocoa
    5 packets stevia
    1 tsp vanilla

    Whip all ingredients together until soft peaks form. Don't over mix or you'll get a buttery consistency.

    *Adjust cocoa to taste

    WHIPPED TOPPING

    3/4 cup heavy whipping cream
    1 tsp vanilla
    2 packets stevia

    Whip all ingredients together until soft peaks form. Don't over mix or you'll get a buttery consistency.

    To assemble cake, take one cooled cake layer and place on plate or tray. Use 1/2 the chocolate filling and spread evenly on cake. Top with second cooled cake layer and spread on rest of chocolate filling. Finally, top with last cake layer, and top with whipped topping.
