Ingredients

1 package Penne (or other small pasta)
2 tbs olive oil
6-8 chicken thighs, deboned and skinned, diced
1 medium onion, diced
3 cloves garlic, diced
2 (14.5 ounce) can diced tomatoes with juice
1 cup crimini mushrooms, sliced
1 cup mozzarella cheese
1/4 cup parsley, chopped
1/2 tsp sea salt
1/4 cup Panko bread crumbs
1/4 cup Parmesan cheese, grated
Directions
Preheat oven to 400 degrees F.
Cook and drain pasta al dente. Put into a large mixing bowl.
Put olive oil in a large saute pan on medium high. Saute the chicken pieces and cook until cooked through. Add the onions, garlic and mushrooms and cook for 5 minutes, then add to the pasta bowl. Add the tomatoes, mozzarella, parsley and salt. Mix. Spray a casserole dish with cooking spray, then pour the chicken and pasta mixture into it. Sprinkle the Pamesan and bread crumbs over the mixture. Bake until the top is golden brown, or about 35 minutes.
