Introduction
A lovely hearty "heart friendly" soup to keep you going on those cold days. Ingredients
2 lbs peeled cubed potatoes
1 medium onion, chopped
1 tsp olive oil
1 TBSP Sweet Paprika
1 tsp Hot Paprika
1 tsp celery seed (NOT Salt)
1/8 tsp ground nutmeg
5 cups No Salt Added Chicken Broth - Blue Menu brand
3 cups Water,
1 cup 1% milk
Directions
Sautee onions in 1 tsp olive oil and set aside.
Heat chicken broth and water until almost to the boil stage. Add to crock pot.
Add onions, both hot and sweet paprika, celery seeds (NOT SALT), nutmeg and cubed potatoes. Cover and set Crock Pot timer to 4 hours - low.
Before serving, heat 1 cup of milk and add to crock pot. Mash some of the potatoes in Crock Pot to thicken consistency of soup before serving
Makes 8 X 1-1/2 cup servings
