Introduction

Ingredients

2 eggs, beaten
3/4 cup turbinado sugar
1 cup whole wheat flour
2 tbsp. unsweetened cocoa powder
1 cup rolled oats
1/2 cup flax meal
1/4 cup almonds, chopped
1/4 cup pecans, chopped
1/4 cup Craisins
1/4 cup chunky peanut butter
1/4 cup Smart Balance oil
Directions
12 chewy energy bars
Beat eggs until fluffy, add in sugar and blend well. Set aside. Combine flour, cocoa, oats, flax. Stir egg mixture into dry ingredients. Blend in peanut butter and oil. Add nuts and fruit.
Press into a 8x8x2 pan which has been sprayed with cooking spray. Bake at 350 degrees for 25 minutes.
Cool. Cut into 12 bars.
