Introduction

Really delicious, fresh salad. Really delicious, fresh salad.
Number of Servings: 10

Ingredients

    1/2 cup sliced almonds
    3 T sugar
    1 head romaine lettuce
    2 cups chopped celery hearts
    20 oz. Mandarin oranges, drained (I used 15 oz can of Dole's)
    4 stems green onion, finely diced
    1 - 0.7 pkg dry Italian dressing mix
    3 T fresh lemon juice
    3 T white grape juice concentrate
    2 T fresh parsley, minced
    1/3 cup water
    1/4 cup light olive oil (I used reg for the calorie calculation)
    3 T honey
    Cook almonds with sugar in a dry skillet until sugar melts and coats almonds. Emove from heat and set aside to cool. Toss salad ingredients together. Mix dressing together in air-tight container and shake well.
    Just before serving shake dressing again and toss with salad, top with almonds.

Directions

10 servings if used as a side salad. Add some grilled chicken, and you could make a nice meal out of this.
