Ingredients

    3 T applesauce
    1/3 cup oil
    2 eggs
    1 1/4 cup milk (I used soymilk)
    1 1/2 cup whole wheat flour
    2/3 cup sugar
    1/2 cup cornmeal
    1 T baking powder
    1/2 tsp salt

Directions

Mix together applesauce, oil, eggs, and milk. Then add the dry ingredients. Mix and bake at 350 for 35 minutes.

    Good
    2/3 cup sugar seemed a little excessive, I only use 2 tablespoons. I liked it but family thought it was to moist for cornbread.

    Next time I will try a little less liquid.

    Absolutely Delicious! Seriously, I thought I would give it a try but never dreamed how much I would love it. My whole family gobbled them up. I actually used sugar free applesauce and it worked great! Thanks for sharing- this will be a recipe I keep forever! - 6/25/07
