Introduction
This simple recipe is my wife's creation when we couldn't decide on what to make. It has good flavor and can be made with very low fat. This simple recipe is my wife's creation when we couldn't decide on what to make. It has good flavor and can be made with very low fat.Number of Servings: 4

Ingredients:
4-5 Tilapia Fillets
3 tsp of minced garlic
4 tbsp butter*
Kirkland's Herbed Seafood rub
4C white long grained rice
2 cup of fresh spinach
Herbed seafood rub:
dehydrated onion and garlic, sea salt, dill weed, parsley, celery seed, demerara sugar, paprika, citric acid, and dehydrated lemon peel.
Directions
Preheat oven to 400 degrees.
Spray 9X13 pan with non-stick spray. Sprinkle fish with desired amount of the seafood rub.
Melt butter and garlic in a small pan or microwave for 20 seconds. Spoon half of the butter on top of the fish.
Bake fish at 400 degrees for 15 minutes or until the fish flakes easily.
Cook 4C of rice according to package directions.
In a bowl, stir in remaining butter and spinach. Cover with plastic wrap, and steam in microwave for 1-2 minutes depending on your microwave.
Put 1C of rice on plate, spoon potion of spinach onto rice with some of the juices, and top with your fish.
* You can use margarine or "I can't believe it's not butter" to lower the fat.
