Introduction

This is a fake pumpkin custard for when you can't find canned pumpkin. This is a fake pumpkin custard for when you can't find canned pumpkin.
Number of Servings: 4

Ingredients

    1 pkg of frozen cooked winter squash (about 12 oz) - thawed
    1 12 oz can of fat free evaporated milk
    1-3 egg whites
    1 T of pumpkin pie spice (add more or less to taste)
    1 t vanilla extract (add more or less to taste)
    1/2 cup to 1 cup of splenda depending on preference


Directions

Mix, (but don't overmix or whip the eggs), put in 8x8 pan that has been sprayed with Pam. Bake at about 400 degrees for about 45 minutes.

If you cut it into 4 large pieces it's about a 100 calories a piece.
