Introduction
A nice sandwich for dinner or for breakfast, when you need to get the eggs out of the house. A nice sandwich for dinner or for breakfast, when you need to get the eggs out of the house.Number of Servings: 1
Ingredients

2 whole eggs (you can use Egg Beaters for a lower calorie option on one of the eggs)
.25 cup low-fat milk (use skim for a lower calorie option)
2 slices light wheat bread
2 slices microwave bacon
Directions
Makes 1 sandwich.
First, make the french toast:
Heat a non-stick pan on medium heat, spraying with Pam before you start (I like Pam high heat because my eggs don't stick later)
Mix one of the eggs and the 1% milk (or use egg beaters and skim) together in a bowl
Lightly dunk each side of the bread into the bowl
Cook the bread on each side roughly 3 minutes or until brown and set aside.
Then cook the egg:
Take your same pan and rinse it out really quick; re-Pam
Crack the egg and cook it to the temperature or hardness you like. I always do over medium.
Then add the bacon
I use a quick heat-microwave bacon but you can use real bacon or, dare I suggest, Canadian bacon.
Compile together on a plate. Should take about 15 minutes, take 1 bowl, 1 plate and 1 pan, for easy clean-up. I'd suggest drinking orange juice or eating an orange with it, as it lightens it up substantially.
