Ingredients

1 lb ground beef
1/2 tsp pepper
1 package medium shell pasta, prepared
4 c shredded part-skim mozzarella cheese
3 c nonfat cottage cheese
2 eggs, lightly beaten
1/3 c grated parmesan cheese
2 Tbsp parsley flakes
2 large can (680 ml) Tomato Sauce
1 red bell pepper, diced
10 baby carrots diced (little more, little less)
Directions
Brown ground beef. Drain, sprinkle with pepper and set aside.
In a large bowl combine pasta, 3 cups mozzarella, cottage cheese, egg, Parmesan cheese, parsley, red pepper, and carrots. Stir gently. Pour into large casserole dish (or two if freezing). Top with beef mixture and tomato sauce.
Bake covered at 350 for 45 minutes. Uncover, sprinkle with remaining mozzarella and bake until cheese is melted and bubbly. Let stand for 10 minutes before serving.
