Introduction

I was trying for cranberry bread in waffle form. Not quite as sweet, but great for freezing and popping in the toaster before I run out the door. I was trying for cranberry bread in waffle form. Not quite as sweet, but great for freezing and popping in the toaster before I run out the door.

Ingredients

    3/4 cup all-purpose flour
    1/2 cup whole wheat flour
    1/4 cup ground flax meal
    1/4 cup rye flour
    1/4 cup sugar
    1 tbsp baking powder
    1/4 tsp salt
    2 eggs
    1/2 cup canola oil
    1 1/4 cup orange juice
    3/4 cup 2% milk
    1 tsp vanilla extract
    1 cup fresh chopped cranberries

Directions

Mix flours, sugar, baking powder, and salt. Add eggs, oil, orange juice, milk, and vanilla. Mix just until moist. Stir in chopped cranberries. Bake according to waffle maker instructions. I got 6 big round waffles (so 24 waffle wedges) with my Belgian waffle iron.

I think you could probably use dried cranberries and a little less sugar, but I haven't tried yet. Skim milk would probably slim down the recipe too, but we always have 2% on hand.
