This is the best vegetarian SCD-legal breakfast ever! This is the best vegetarian SCD-legal breakfast ever!

    1 Tbsp butter
    0.5 medium onion, chopped
    2 garlic cloves, chopped
    1 medium tomato, chopped
    1 cup baby arugula
    2 medium eggs, beaten
    Oregano, basil and other herbs, to taste


Melt the butter in a skillet; gently sauté the onion and garlic until translucent, stirring occasionally. Add tomato and arugula and sauté until arugula just wilts. Add eggs, cover and lower heat. Cook for about 5-8 minutes, carefully flip and cook other side.
