Ingredients

5 chicken thighs
2 slices whole wheat bread (for 1 cup bread crumbs)
2 TBSP olive oil
1 TBSP dijon mustard
1 TBSP dill
salt and pepper to taste
Directions
Preheat oven to 350 degrees.
Tear bread into pieces. Use blender to make into bread crumbs. (Do one piece at a time.
Place bread crumbs on a cookie sheet and bake about 3-5 minutes, until crispy.
Cut chicken into strips or pieces as desired.
In a medium bowl pour olive oil and mustard over chicken and mix until evenly coated.
Then mix bread crumbs, dill, salt and pepper in a large bowl.
Add chicken and toss until each chicken piece is coated in bread crumbs.
Arrange chicken on a sheet pan in one layer (none touching).
Bake at 350 degrees for 20 - 25 minutes or until crispy, turning once.
