Introduction

This recipe blends the flavor of lasagna into a comforting soup. It calls for italian sausage and parmesan cheese, but I used ground turkey and no cheese (well, maybe just a little if I've been good.) But a cup and a half of this soup makes a great lunch!

Also, I'm thinking next time I'll add black olives. The original recipe had carrots in it, but I'm not a fan, so I think that would be a great swap!

Ingredients

    1 lb ground turkey or turkey sausage
    2 cups onions, chopped
    2 cups mushrooms, sliced
    2 T garlic, minced
    4 cups chicken broth
    1 can stewed italian tomatoes (14.5oz)
    1-2 cans of tomato sauce (10.75oz)
    1 cup pasta
    2 cups fresh spinach
    basil for garnish

Directions

Brown the meat in a large soup pot. After 3 minutes, add onions, mushrooms and garlic. Add broth, tomatoes and sauce and bring to a boil. Drop in pasta and simmer until cooked, about 10 minutes (or according to package.) Stir in spinach and top with basil (and cheese if you deserve it!)
