Introduction

Ingredients

4 medium chicken breasts
1/2 green pepper
1/2 yellow pepper
1/2 red pepper
1/2 onion
1/2 a zucchini
2 oz chunk feta cheese
Garlic, Salt, Pepper Mrs. Dash Garlic & Herb seasoning to taste.
Tools needed: Saran Wrap, Cutting board, Meat pounder (flat side necessary) & Toothpicks.
Directions
Preheat oven to 350 degrees.
Slice all the veggies Julien style (VERY thin slices).
Take a cutting board and put down a sheet of plastic wrap. Place a chicken breast ontop of the saran wrap. Put another sheet of plastic wrap over it so you have a plastic wrap chicken sandwich. Take the meat pounder and flatten the chicken breast gently until it's about a 1/4-1/2 inch thick. (the thinner the better -- but don't pound too many holes into it. You want to wrap the chicken around it!)
Place the Veggies on one side of the chicken breast, along with the cheese and some seasoning for flavor. Roll the veggies/cheese up in the chicken breast so it looks alot like wrap. Close the ends with toothpicks to keep them together.
Place on gently greased baking sheet, and put in the oven at 350 degrees for about 20 minutes, or until cooked through.
Serve with some rice or asparagus for a full meal your family will love!
