Muffins Muffins
Number of Servings: 12

Ingredients

    1 cup oats
    1 cup lowfat plain yogurt
    1/4 cup margarine
    2 tablespoons brown sugar
    1 banana
    1/4 cup egg substitute
    1 cup flour (all purpose)
    1/8 teaspoon salt
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/2 cup raisins

Directions

1. mix yogurt with oatmeal - let sit

2. beat margarine, sugar and banana together

3. add egg substitute and oatmeal misture

4.add dry ingredients into oatmeal mixture. stir in raisins

5.spoon into 12 muffin cupscoated with nonstick cooking spray

6.bake at 375 degrees for 20-25 minutes

    Very Good
    This was excellent. I didn't have any bananas, so I cut up a couple granny smith apples and cooked them down with a little sugar and water. Instead of raisins, I chopped dried cherrries, which, again, is what I had on hand. These make a great quick breakfast I can grab as I'm running out the door! - 2/20/11

    Will try this! But will substitute currants for raisins, I find they always work better in baked puddings. Still plenty of fibre! - 7/7/09
