Ingredients

2 boneless skinless chicken breast, pounded thin and thawed
2 tbsp capers
1 lemon
1 oz white wine
1/2 cup mushrooms, sliced
2 slices onion, chopped
2 large garlic cloves
lemon pepper
black pepper
dried basil
Directions
Makes 2 chicken breasts with sauce.
Pound chicken thin (or use chicken tenderloins). Add olive oil to skillet and heat over med-high heat until hot. Press garlic into pan, add chopped onions and sliced mushrooms. Sautee 2-4 minutes, until onions are clear-ish and mushrooms are soft. Lower heat to medium and add chicken, lemon juice and capers. Sprinkle with lemon pepper (lots), black pepper, and a little bit of dried basil. Allow chicken to simmer and cook through, turning once. Before removing, increase temp to med-high again and add wine. Cook for 1-2 minutes.
Serve alone or over pasta or rice. :)
