Introduction

A simple base to put over pasta, or even rice! A simple base to put over pasta, or even rice!
Number of Servings: 6

Ingredients

    1 Zuchinni
    1 Green Pepper
    1 Red Pepper
    1/2 Onion
    1 Jar Pasta Sauce
    1 lb Chicken Breast

Directions

Cut chicken in to small chunks, season with Italian Seasoning, salt, and pepper to taste, and saute in a pan with Pam or Olive Oil (not included in calorie count!).

Cut up veggies, and saute, blanch in water, or use a Glad SteamFresh Bag (I love these, it saves a pan to clean, takes no attention span, and i don't have to use any oil to get the veggies cooked!)

When chicken is cooked, pour in your favorite pasta sauce (Barilla's Tomato and Basil is PERFECT for this recipe!). Toss veggies in to the chicken/sauce mix and cook long enough for the sauce to be hot.

Technically, the pasta sauce should serve 4 people, however because of all the veggie goodness in this recipe I have set the Serving Size to 6 (also, I don't like a lot of sauce!). Serve over whole wheat pasta or even rice!

    After cooking chicken in oil, added vegetables and stir fried rather than blanching. Then put in sauce. Made slight change to recipe by adding garlic and italian seasoning to taste.

    I used salt, pepper, garlic pepper, ground red pepper, and oregano to season. I stir fried veggies in with the chicken. It was very tasty! It will be a regular in our rotation. - 6/8/10

    Very Good
    Left out zuchinni, forgot to put in onion and made it over rice. It's more flavorful than I expected and nice and quick to make. Will be making again when I don't know what to cook. :) - 4/28/10
