Number of Servings: 60

Ingredients

    1 15-16 oz box of bran cereal
    4 c Whole-wheat flour
    1 c ground flax (or oat bran)
    ½ c Splenda/Sugar baking blend
    1 tbsp + 2 tbsp baking soda
    2 c Raisins
    ¼ c Oil
    1 c Applesauce
    1 qt buttermilk
    4 Eggs (or equiv of Egg Beaters)

Directions

There is a resting period after mixing so preheat oven to 400 degrees when done mixing. Line standard size muffin cups with paper liners. Lightly spray with Pam or other spray oil.

Mix all dry ingredients, including raisens, in a large bowl. In a separate bowl mix the rest of the ingredients well. Pour wet ingredients into the dry and stir only until mixed. Do not over mix. There may be a few small dry lumps. Cover with plastic wrap or a damp towel and let rest for 30 minutes to an hour.

With an ice cream scoop, Fill muffin cups with one slightly mounded scoop each. Bake for 15 minutes. Check with toothpick to see if cooked through.

Once cooled pack in ziplock freezer bags and freeze. Toss one or 2 into your lunch and they will be great for break time snacks or microwave for breakfast and serve with coffee.
