Number of Servings: 6

Ingredients

    3 ears of corn, grilled or wrapped in wax paper and cooked in the microwave
    1 cup grape tomatoes, sliced in half lengthwise
    2 green onions, finely chopped
    1 red or orange sweet bell pepper, chopped in 1/2 inch pieces
    1 Tbsp extra virgin olive oil
    2 Tbsp red wine vinegar
    salt and pepper to taste (about 1-2 tsp each)

Directions

Cook the ears of corn, either on the grill or in the microwave. Cool and slice corn off cob. In bowl, mix corn, tomatoes, green onion, pepper, oil, and vinegar. Add salt and pepper to taste. Chill for at least 20 minutes before serving. If chilling longer, let sit at room temperature for 5-10 mintues before serving. Enjoy!
