Introduction

Ingredients

* *Japanese Udon Noodles, 10 oz (remove)
* *Bean Sprouts, 2 cup (remove)
* Carrots, raw, 1 large (7-1/4" to 8-1/2" long) (remove)
* Onions, raw, 1 medium (2-1/2" dia) (remove)
* *Soy Sauce, 2 tbsp (remove)
* Serrano Peppers, 1 pepper (remove)
* Chicken Breast, no skin, 10 ounces (remove)
* Garlic, 1 clove (remove)
* Truvia Natural Sweetener, 1 serving (remove)
Mint leaves that are fresh are a must. If you aren't into mint, use basil! Add the mint until its to your liking.
Garlic, Ginger, and more chilies as desired.
Directions
Begin preparing noodles as package directs.
Begin with your chicken. Slice into chunks and begin cooking. Make sure your pan is sprayed with nonstick spray.
Mix the soy sauce, ginger,and the sweetener and set aside.
Add your pepper to the chicken and entire onion. (add less, but it bulks it up!) Cook a bit longer and add carrot and sprouts. Last, add garlic.
add noodles and sauce and toss in the pan
add the mint then so that it wilts lightly.
SERVES FOUR.

I'm not familiar with ginger and it didn't state how much to use so I made it without ginger. Also, was I suppose to drain the udon or mix the broth into ingredients as well? Your pic makes it look more like soup, mine was dry. I had to double the ingredients to feed my family of 6. Overall good - 9/15/11
