Introduction

Ingredients

3 oz. boneless, skinless chicken breast
1 egg white slightly beaten
1/8 C Italian bread crumbs
1 TBSP shredded Parmesan cheese
1/4 C Ragu spaghetti sauce
1 oz part skim shredded mozzarella cheese
1 reduced calorie wheat hamburger roll
Directions
Mix bread crumbs and parmesan cheese in a shallow dish.
Flatten chicken a little bit with meat pounder. Note: I don't have a meat pounder so I just put the chicken into a ziplock bag and pound with the bottom of a pan.
DIP chicken in egg whites first, then in bread crumb mixture, turning to evenly coat both sides of chicken. Place in greased baking pan.
BAKE at 400 degrees°F for 20 minutes or until chicken is cooked through. Top with spaghetti sauce and mozzerella cheese. Bake another 5 minutes.
*At this time you can put your hamburger roll right on the oven rack to warm.
Remove chicken and roll from oven an assemble into a sandwich.
Recipe makes 1 serving. Make several sandwiches at the same time by multiplying recipe by how many sandwiches you want to make.
