Ingredients

* *Flour, white, 3 cup
* *active dry yeast, 3 tsp
* Salt, 1 tsp
* Olive Oil, 2 tbsp
* Granulated Sugar, 1 tsp
* Water, tap, 1 cup (8 fl oz)

Sausage, pork, 4 link, 4/lb
* Mozzarella Cheese, part skim milk, 16 oz
* Spinach, fresh, 1 cup
* Garlic, 3 cloves minced
* Tomato Sauce, 1 cup
* Oregano, ground, 1 tbsp
* *Extra Virgin Olive Oil, 4 tbsp
Directions
Combine the warm water, yeast, and sugar and let stand for 5 minutes until bubbly. Add 2 T oil, salt, and flour. Add extra flour if needed enough for the dough to pull away from the bowl. Knead for 7 min. Place in a greased bowl and cover with plastic wrap and cover with towel. Place dough in a warm area and let rise until double, about 1 hour. While the dough is rising brown the sausage, and combine the tomato sauce, garlic, 1/4 c oil, and oregano in a sauce pan and turn the heat on low. Bring the sauce to a simmer for 30 min.
Preheat oven to 500.
When the dough is done rising, divide into 2 balls. Spread out 1 dough on a pizza stone to desired thickness, add half of the sauce, torn spinach, sausage, and cheese. Place in oven and cook for 13-15min. Repeat with other dough and toppings. 1 pizza makes 10 servings
