Introduction

I tried to add more fiber to a Bran & Blueberry muffin recipe. I made 9 regular sized muffins. This amount of batter could have made 6 large muffins if you have the larger pans.
Mine came out pretty moist so baking times may need to be adjusted.

Ingredients

    Fiber One Cereal, 0.5 cup
    Egg white, 1 large
    *Canola Oil, 2 tbsp
    Yoplait Yo plus vanilla yogurt, 2 (4 oz) servings
    *Whole Wheat Flour, 0.5 cup
    *Flour, white, .5 cup
    Brown Sugar, .25 cup, (not packed)
    Baking Powder, .75 tsp
    Salt, .25 tsp
    Blueberries, fresh, .25 cup

Directions

Heat oven to 400 degrees F
Place baking cups into muffin pans or grease the bottom of each so the muffins will come out easily later.
In a medium bowl, wisk together the egg white, oil, and yogurt. Crush the bran cereal before adding to the mixture. Add the flours with the salt and baking powder mixed in and sifted together. Stir or wisk all and then add the berries. Divide the batter into the muffin cups, filling about 3/4 full.
Bake 18 to 20 minutes or until brown and a toothpick comes out clean when inserted to check for doneness.
9 reg. sized muffins are about 134 cal. each
6 large sized muffins are about 200 cal. each
