Mix corn bread mix (not cooked cornbread) with about one cup of water and olive oil and season to taste, mixture should retain as much thickness as possible while still spreading evenly over the chicken. Dip and cover chicken. Place on baking sheet sprayed with non-stick spray. Bake at 350 degrees for 40-45 minutes or until chicken is thoroughly cooked.
