Introduction

This was inspired by a need to clean out the fridge. I am sure that adding extra veggies (Squash, zucchini, or diced tomatoes would be great in it too.) This is with no extra sodium added. Sodium could be further decreased by making your own veggie base. This was inspired by a need to clean out the fridge. Ingredients

    Lentils, 1 cup
    Mushrooms, fresh, 4 medium
    Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
    Celery, raw, .75 cup, diced
    Garlic, 2 cloves
    Olive Oil, 2 tbsp
    *Imagine Low Sodium Vegetable Broth, 4 cup
    Onions, raw, 1 cup, chopped
    *Brewer's Yeast, 2 tbsp

Directions

Sautee Mushrooms, carrots, onions, celery and garlic in olive oil until tender. Season with 1 tsp black pepper and 1 tbsp italian seasoning (No sodium variety). Add broth and heat until boiling. Add lentils and allow to boil one minute while stirring. Reduce heat to low, and simmer until lentils are tender.
