Introduction

Ingredients

1 - 2 packages of large tortillas
3 large chicken breasts
2 cups sour cream
2 cups monterery jack cheese
1 small can diced green chilis
1 can Ortega enchilada sauce
Directions
Makes 13 servings total - in two 9x13 pans
Boil chicken until no longer pink. Pull out and let cool.
Shred the chicken and place in bowl.
Place 1 1/2 cups of cheese in bowl with chicken
Place 1 1/2 cups of sour cream in same bowl.
Drain chilis and put in bowl with chicken
Mix together well.
Pre heat oven to 450
Spray pans before rolling tortillas.
Lay tortilla out flat, spread even amount in each tortilla. Roll and place in pan. Fill each pan.
Pour Enchilada sauce over the top and spread remaining cheese all over.
Place in oven for 30 minutes, it is ready when the sauce is bubbling and the cheese is brown.
(Note: If you want to freeze them before cooking, cover the pan with 2 layers of plastic wrap and freeze for up to 3 months. Put in fridge when you want to cook it to thaw for 4-8 hours. Remove the plastic wrap and cook for 30-45 minutes)
