Original recipe from Allrecipes.com with a few “healthy” modifications. Since it was near St. Patty's Day I sprinkled these with a little GREEN powdered sugar to make them a bit more festive. Ingredients

    1 cup unsweetened applesauce
    1 – 5.3oz container *Greek Nonfat Vanilla Yogurt
    1 small egg
    2 cups all-purpose flour
    1/2 cup Splenda (sugar substitute)
    1 teaspoon baking soda
    2 teaspoon ground cinnamon
    1/2 teaspoon low sodium salt
    8 oz canned whole cranberries, chopped or in food processor
    1.5 oz chopped walnut pieces
    1 oz semi-sweet Chocolate chips

Directions

Preheat oven to 350 degrees F. Spray muffin pan with cooking spray, or use paper liners. In a large bowl, mix together applesauce, yogurt and egg. In another bowl, combine flour, sugar, baking soda, cinnamon and salt. Gradually add dry mixture to wet mixture. Stir until moistened. Fold in processed cranberries, walnuts and chocolate chips. Spoon mixture into muffin cups about 2/3 full. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 2 minutes before removing. ** Dust with powder sugar for a little extra

*Can use any yogurt for creative flavor, does not need to be GREEK either.
