Ingredients

    1 TB Olive Oil
    1TB Canola Oil
    1 Can Private Selection Organic Black Beans (15 oz can)
    1/2 red sweet pepper, chopped
    1 medium onion
    1 Portabella mushroom, stem removed

    1 C Brown Rice, uncooked

Directions

This recipe makes 5 servings of 3/4 cup veggie mixture and 1/2 C Brown rice.

Do ahead: put 1 cup med grain brown rice in a microwavable container with lid. Add 1/2 tsp. salt, 1 tsp. each Olive and Canola Oil, 3 cups water. Stir. Microwave on "simmer" or on 80% for 40 minutes, if you like your rice chewey, If not, 50 minutes. You may split up cooking time in half and stir half way through to check to see if you have enough water. (In case your lid leaks steam)

Veggie mixture: heat a skillet with lid to saute. Put in 1 tsp each olive and canola oil. Add chopped vegetables, 1/2 tsp. salt and pepper; stir, put on lid. Wait a few minutes, stir again, replace lid. Do this until veggies are done to your taste.
May also add chopped garlic to this recipe.
Serve vegetable over rice for a pretty dish.
