Ingredients
-
2C Raisins
3/4C water
1/8t baking soda
1/4C Honey
3T Lemon Juice
2T Corn Starch
Cook over low heat until thick. Cool.
3/4C margarine or butter
1 Egg
2 Bananas - mashed
3/4C brown sugar
1t salt
1/2t baking soda
1C shredded coconut
1 3/4C white whole wheat flour
1 1/2C rolled oats
1C chopped nuts
Mix dry ingredients from above until crumbly. Firmly press half of crumb mixture in 9x13" greased pan (I sprayed with Pam). Spread cooled filling over top and cover with remaining crumbmixture, patting down lightly.
Bake at 400 for 25-30 minutes (I baked 30 minutes)
Cut into bars while warm - but not hot.
There's lot's of room to play here. There original recipe didn't have bananas, coconut or walnuts! Oh - or an egg. I think egg holds it all together well.
Directions
Filling - In a pot add raisins, honey, 3/4 cup of water and 1/8t of baking soda and 2T corn starch. Cook on med low until thick. Remove from heat to cool.
Main - Mix remaining dry ingredients. Mix butter, egg and banana and then cut in to the dry ingredients. (The original recipe called for margarine - I didn't have any so I used butter)
Layer half of the main ingredients in a 9x13 greased pan (I used pam). Then smooth the 'cooled' raisin mixture on top. Finally covering the raisin mixture with the remaining main ingredients and baking for 30min at 400degrees.
