    Boneless, Skinless Chicken Breasts (total 2 lbs)
    1/2 onion, thinly sliced
    1/2 cup ketchup
    1/4 cup brown sugar
    1/2 can cranberry sauce w/ whole berries
    3/4 tsp dried mustard


Preheat oven to 375 degrees.

Combine ketchup, brown sugar, cranberry sauce and dried mustard in a medium bowl.

Spray large skillet with non-fat cooking spray. Sear chicken over high heat until golden brown, then remove from the skillet.

Spray the skillet again and add the onion. Brown onion until soft, add sauce gradually.

Add chicken back into the skillet and bring sauce to a simmer. Place directly in the oven and bake for 25 minutes or until chicken is cooked through.

Yields about 8 - 3.5 oz servings of chicken w/2 Tbsp sauce each.

    Very Good
    I made double of everything except the chicken so that I could serve the sauce over noodles. It was good. I might try reducing the amount of sugar next time - 10/6/07
