Introduction

I omitted the saltines which are high in fat and calories. I used oats instead to soak up the moisture and hold the loaf together. The idea for oats came from an old recipe from a great aunt. Ingredients

    Preheat oven to 350 degrees.

    Scramble in large bowl:
    2 eggs
    1 Cup Heinz Ketchup
    1 medium onion, finely chopped
    2 Tbsp. minced garlic (2 cloves)

    Add 2 pounds lean ground sirloin and mix well
    Add 1/2 Cup of oats and mix well

    *** NOTES:
    1) Don't use too many oats or it will make the meatloaf very dense and dry. A few oats go a long way to soak up the moisture in the meatloaf.

    2) Another tip - for a meatloaf that will hold together well, the more thoroughly it's mixed, the better it will be. If you don't have a heavy duty mixer (such as a Kitchenaid stand mixer), it's really best to mix using your hands and squeezing through your fingers. I let the ingredients warm up at room temperature for about an hour so it won't chill my hands too much.

    Divide mixture into 2 meat loaves - If baking both at the same time, you'll need a large pan. I use the oven broiler pan. (I add foil to the bottom for easy clean up later.)

    Top each loaf with 1/2 Cup of Heinz Ketchup

Directions

Makes 2 Meat Loaves - Bake for one hour at 350 degrees

I divide into 6 servings per meatloaf - 12 total servings for this recipe
